PROCESS
Spring water – natural origin Ethyl Acetate (EA) combined method:
Every coffee bean (as well as many fruits and vegetables) naturally contains EA, so we don’t add any foreign materials. Natural EA obtained from the sugarcane industry in Colombia.
We use this solvent of natural origin and fresh spring water to extract caffeine from the grain smoothly, without exposing it to excessive heat and pressure. This preserves the natural structure of the coffee bean cells. This process allows an excellent roasting that yields a perfect aroma and flavour. The process is FDA approved, and the Ethyl Acetate residuals are below 5 ppm, while international norms allow for up to 20 ppm. A ripe banana has about 20 times more EA than our decaffeinated coffee!
Also, any residual EA in the coffee beans evaporate during roasting because it is volatile (E.A. evaporates at 70°C, coffee is roasted around 200°C).
